I cooked these bean pancakes today. They were good, wholesome and cheap. I won’t mention the cookbook I got this from because the recipe did not work at all until I added flour and eggs, and I think that makes it different enough to not give creative credit to someone else. Anyway, very tasty.

This is delicious. The recipe is from Madhur Jaffrey’s world vegetarian cookbook. The magic ingredient is hot smoked paprika. It cooks down to a beautiful hot, nutty, smokey, spinachey dry stew, I suppose you could say. I’m having it for lunch today with some toasted pittas. It makes a great tapas.
